Ingredients

  • 3 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 0.75 cup unsalted butter, cold and cubed
  • 1 cup whole milk, cold
  • 0.25 cup heavy cream, cold
  • 2 tablespoons melted butter (optional, for brushing)

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, sugar, and salt until well combined.

Step 3

Using a pastry cutter or your hands, cut the cold, cubed butter into the flour mixture until it resembles coarse crumbs. The butter pieces should be about the size of small peas.

Step 4

Create a well in the center of the dry mixture and pour in the cold milk and heavy cream. Gently mix using a wooden spoon or spatula until the dough just comes together. Do not overmix.

Step 5

Turn the dough out onto a lightly floured surface and knead it gently 4-5 times to bring it together, being careful not to overwork the dough.

Step 6

Pat the dough into a rectangle about 1-inch thick. Fold the dough into thirds (like a letter), turn it 90 degrees, and roll it out again into a rectangle. Repeat the folding process two more times to create flaky layers.

Step 7

After the final fold, pat the dough out to about 1.5 inches thick. Use a 2.5-inch round biscuit cutter to cut out biscuits, pressing straight down without twisting. Re-roll the scraps as needed, but handle the dough as little as possible to avoid tough biscuits.

Step 8

Place the biscuits on the prepared baking sheet, making sure they are touching slightly (this helps them rise taller).

Step 9

Bake in the preheated oven for 13-15 minutes, or until the tops are golden brown.

Step 10

If desired, brush the tops of the hot biscuits with melted butter right out of the oven for added flavor and shine.

Step 11

Serve warm with butter, jam, or honey. Enjoy your Sky High Biscuits!
