Ingredients

  • 16 pieces baby potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons unsalted butter
  • 3 tablespoons sour cream
  • 0.25 cup crumbled blue cheese
  • 0.5 teaspoon garlic powder
  • 2 tablespoons fresh chives
  • 2 tablespoons grated Parmesan cheese (optional)

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash and dry the baby potatoes. Toss them in 2 tablespoons of olive oil, 1 teaspoon of salt, and 1/2 teaspoon of black pepper.

Step 3

Spread the potatoes evenly on a baking sheet and roast for 25-30 minutes, or until tender when pierced with a fork.

Step 4

Let the roasted potatoes cool slightly, then carefully slice off the top third of each potato. Using a small spoon or melon baller, scoop out the interior of each potato, leaving the skins intact to form small potato shells. Reserve the scooped-out potato flesh in a bowl.

Step 5

Mash the reserved potato flesh with 2 tablespoons of butter, 3 tablespoons of sour cream, 1/4 cup of crumbled blue cheese, and 1/2 teaspoon of garlic powder until smooth. Adjust seasoning with additional salt and pepper to taste.

Step 6

Fill each potato shell with the mashed potato and blue cheese mixture, slightly mounding the filling.

Step 7

Place the filled potato shells back onto the baking sheet. Optionally, sprinkle the tops with grated Parmesan cheese for a golden finish.

Step 8

Bake the stuffed potatoes for another 10-15 minutes, or until the tops are lightly browned and the filling is heated through.

Step 9

Garnish the baked potatoes with fresh chopped chives for a pop of color and added flavor.

Step 10

Serve immediately as bite-sized appetizers. Enjoy!
