Ingredients

  • 500 grams Potatoes
  • 4 pieces Garlic cloves
  • 120 milliliters Extra virgin olive oil
  • 2 tablespoons White wine vinegar
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • 0.5 teaspoons Ground black pepper
  • 2 liters Water (for boiling)

Directions

Step 1

Peel the potatoes and cut them into large chunks for even cooking.

Step 2

In a large pot, bring 2 liters of water to a boil. Add a pinch of salt and the potato chunks.

Step 3

Boil the potatoes for about 15-20 minutes, or until they are fork-tender. Drain the potatoes and let them cool slightly.

While the potatoes are boiling, peel the garlic cloves and mince them finely or crush them into a paste using a garlic press.

Transfer the cooled potatoes to a large mixing bowl. Mash them thoroughly with a potato masher or ricer until no lumps remain.
