  • 1 piece Red bell pepper, sliced
  • 1 piece Green bell pepper, sliced
  • 1 piece Yellow bell pepper, sliced
  • 1 piece Large onion, sliced
  • 8 pieces Tortillas (flour or corn)
  • 0.25 cup Fresh cilantro, chopped
  • 0.5 cup Sour cream (optional)
  • 0.5 cup Guacamole (optional)

Directions

Step 1

In a medium bowl, whisk together 3 tablespoons of olive oil, lime juice, soy sauce, minced garlic, cumin powder, chili powder, salt, and black pepper to create the marinade.

Place the skirt steak in a large resealable plastic bag or shallow dish. Pour the marinade over the steak, ensuring it is evenly coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to infuse.
