  • 2 tablespoons Vegetable oil
  • 1 large Yellow onion (diced)
  • 4 cloves Garlic (minced)
  • 4 cups Chicken stock
  • 2 large Russet potatoes (peeled and cubed)
  • 1 cup Roasted green chilies (peeled, seeded, and chopped)
  • 1 cup Diced tomatoes (canned, drained)
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 0.25 cup Fresh cilantro (chopped, for garnish)
  • 4 pieces Lime wedges (for serving)

Directions

Step 1

Season the pork shoulder cubes with 1 teaspoon of salt and 1 teaspoon of black pepper.

Step 2

Heat the vegetable oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Sear the pork in batches, ensuring all sides are browned. Remove the pork from the pot and set aside.
