Ingredients

  • 12 oz Spaghetti
  • 3 cups Cooked chicken (shredded or cubed)
  • 4 tbsp Unsalted butter
  • 1 large Yellow onion (diced)
  • 8 oz Button mushrooms (sliced)
  • 3 cloves Garlic (minced)
  • 0.25 cup All-purpose flour
  • 3 cups Chicken broth
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese (grated)
  • 1 cup Mozzarella cheese (shredded)
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.5 tsp Garlic powder
  • 0.5 cup Breadcrumbs (optional, for topping)
  • 1 as needed Cooking spray

Directions

Step 1

Preheat the oven to 375°F (190°C) and lightly grease a 9x13-inch casserole dish with cooking spray.

Step 2

Bring a large pot of salted water to a boil. Cook the spaghetti until al dente, according to package instructions. Drain and set aside.

Step 3

In a large skillet over medium heat, melt the butter. Add the diced onion and cook for 2-3 minutes, until softened.

Step 4

Add the sliced mushrooms to the skillet and sauté for 5 minutes, or until they release their moisture and turn golden.

Step 5

Stir in the minced garlic and cook for an additional 30 seconds, until fragrant.

Step 6

Sprinkle the flour over the vegetables and stir well to coat. Cook for 1 minute to remove the raw flour taste.

Step 7

Gradually pour in the chicken broth, stirring constantly to prevent lumps. Bring the mixture to a simmer and cook until slightly thickened, about 3-4 minutes.

Step 8

Stir in the heavy cream, Parmesan cheese, salt, black pepper, and garlic powder. Mix until smooth and creamy.

Step 9

Add the cooked chicken and the drained spaghetti to the skillet. Toss to coat everything evenly with the sauce.

Step 10

Transfer the mixture to the prepared casserole dish. Sprinkle the shredded mozzarella cheese evenly over the top.

Step 11

If desired, top with breadcrumbs for added crunch.

Step 12

Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbling, and the top is lightly golden.

Step 13

Remove from the oven and let rest for 5 minutes before serving. Garnish with parsley if desired and serve warm.
