Ingredients

  • 1 cup whole wheat flour
  • 0.25 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup unsweetened applesauce
  • 0.25 cup plain Greek yogurt (non-fat or low-fat)
  • 0.25 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 0.5 cup unsweetened almond milk (or any milk of choice)
  • 0.25 cup dark chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners or lightly grease it.

Step 2

In a medium-sized mixing bowl, whisk together the whole wheat flour, cocoa powder, baking powder, baking soda, and salt until well combined.

Step 3

In a separate larger bowl, combine the unsweetened applesauce, Greek yogurt, honey or maple syrup, vanilla extract, and egg. Mix thoroughly until smooth.

Step 4

Slowly add the dry ingredients (flour mixture) to the wet ingredients, alternating with the almond milk. Begin and end with the dry ingredients. Mix gently after each addition until the batter is well incorporated but not overmixed.

Step 5

If desired, fold in the dark chocolate chips for extra chocolatey goodness.

Step 6

Evenly distribute the batter into the prepared muffin tin, filling each cup about 2/3 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean or with a few moist crumbs.

Step 8

Allow the cupcakes to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.

Step 9

Serve plain or top with your favorite light frosting or powdered sugar for a healthier treat!
