Ingredients

  • 4 cups Fresh spinach
  • 1 cup Artichoke hearts (canned or jarred, drained and chopped)
  • 1 cup Nonfat plain Greek yogurt
  • 4 ounces Reduced-fat cream cheese (softened)
  • 1 cup Shredded part-skim mozzarella cheese
  • 0.25 cup Grated Parmesan cheese
  • 2 cloves Minced garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a small baking dish or casserole dish and set aside.

Step 2

In a large skillet over medium heat, add the fresh spinach and cook, stirring frequently, until wilted (about 2-3 minutes). Remove from heat, let cool slightly, and squeeze out excess liquid. Roughly chop the spinach and transfer to a mixing bowl.
