Ingredients

  • 1.5 cups All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 0.5 cup Unsweetened applesauce
  • 0.5 cup Granulated sugar
  • 3 Egg whites
  • 1 teaspoon Vanilla extract
  • 0.75 cup Low-fat buttermilk
  • 3 drops Red food coloring
  • 1 cup Powdered sugar
  • 4 ounces Light cream cheese (softened)
  • 0.5 teaspoon Vanilla extract (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.

Step 3

In a large bowl, mix the unsweetened applesauce and granulated sugar until well combined.

Step 4

Add the egg whites and vanilla extract to the applesauce mixture and whisk until light and fluffy.

Step 5

Gradually alternate adding the dry flour mixture and low-fat buttermilk to the wet ingredients, starting and ending with the dry ingredients. Mix until just combined. Do not overmix.

Step 6

Stir in the red food coloring to achieve the desired pink hue.

Step 7

Evenly divide the batter between the prepared cupcake liners, filling each about 2/3 full.

Step 8

Bake in the preheated oven for 16-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.

Step 9

Remove the cupcakes from the oven and let cool completely on a wire rack before frosting.

Step 10

While the cupcakes cool, prepare the frosting. In a mixing bowl, beat the powdered sugar and softened cream cheese together until smooth and creamy.

Step 11

Add the vanilla extract for frosting and continue mixing until fully combined.

Step 12

Once the cupcakes are completely cooled, frost them with the cream cheese frosting using an offset spatula or piping bag.

Step 13

Serve immediately or store in an airtight container in the refrigerator for up to 3 days.
