Ingredients

  • 1 pound shrimp, peeled and deveined
  • 3 medium zucchini, sliced into half-moons
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes
  • 1 large lemon, juiced and zested
  • 2 tablespoons parsley, chopped
  • 1 tablespoon butter (optional)

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the shrimp to the skillet and season with half of the salt (1/2 teaspoon) and black pepper (1/4 teaspoon). Sauté for 2-3 minutes, flipping once, until the shrimp are pink and opaque. Remove the shrimp from the skillet and set aside.
