Ingredients

  • 12 ounces ziti pasta
  • 1 pound chicken breasts
  • 3 cups broccoli florets
  • 2 tablespoons olive oil
  • 3 cloves garlic cloves, minced
  • 2 cups chicken broth
  • 1 cup milk
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red pepper flakes (optional)

Directions

Step 1

Cook the ziti pasta in a large pot of salted boiling water for 8-10 minutes, or until al dente. During the last 2 minutes of cooking, add the broccoli florets to the pot to cook them along with the pasta. Drain the pasta and broccoli, then set aside.

Step 2

While the pasta is cooking, dice the chicken breasts into bite-sized pieces and season them with salt and pepper.

Step 3

Heat the olive oil in a large, deep skillet over medium-high heat. Add the chicken pieces and sauté for 5-7 minutes, or until the chicken is golden and fully cooked. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for 1-2 minutes until fragrant but not browned.

Step 5

Pour the chicken broth and milk into the skillet, scraping up any browned bits from the bottom. Bring the mixture to a simmer.

Step 6

Stir in the Parmesan cheese, shredded mozzarella, salt, black pepper, and optional red pepper flakes, whisking until the cheeses are melted and the sauce is smooth and creamy.

Step 7

Add the cooked pasta, broccoli, and chicken back into the skillet. Toss everything together to coat with the sauce.

Step 8

Cook for another 2-3 minutes, stirring occasionally, until everything is heated through and well combined.

Step 9

Serve the skillet ziti warm, garnished with additional Parmesan cheese or a sprinkle of fresh parsley if desired.
