Ingredients

  • 1 pound ground beef
  • 1 medium, diced yellow onion
  • 1 medium, diced red bell pepper
  • 2 cloves, minced garlic
  • 2 medium, diced russet potatoes
  • 1 cup frozen corn kernels
  • 14.5 ounces canned diced tomatoes
  • 1 cup beef broth
  • 1 teaspoon paprika
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 cups baby spinach
  • 2 tablespoons olive oil
  • 1 cup, shredded (optional) cheddar cheese

Directions

Step 1

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Step 2

Add the ground beef to the skillet and cook until browned, breaking it up with a wooden spoon, about 5-7 minutes. Drain any excess grease and set the beef aside on a plate.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced onion and bell pepper and sauté for 3-4 minutes until softened.

Step 4

Add the minced garlic to the skillet and cook for 30 seconds until fragrant.

Step 5

Stir in the diced potatoes and cook for 5 minutes, stirring occasionally, to allow them to begin softening.

Step 6

Add the frozen corn, canned diced tomatoes with their juices, and beef broth to the skillet. Stir to combine.

Step 7

Season the mixture with paprika, chili powder, oregano, salt, and pepper. Stir everything well.

Step 8

Return the cooked ground beef to the skillet and mix it in. Cover the skillet with a lid, reduce the heat to medium-low, and simmer for 15-20 minutes, or until the potatoes are tender.

Step 9

Once the potatoes are cooked through, stir in the baby spinach and let it wilt, about 2 minutes.

Step 10

Taste and adjust seasonings if needed. If desired, sprinkle shredded cheddar cheese over the top and allow it to melt before serving.

Step 11

Serve hot and enjoy your flavorful skillet supper!
