Ingredients

  • 8 cups fresh spinach
  • 2 tablespoons olive oil
  • 3 whole, minced garlic cloves
  • 0.25 teaspoons red pepper flakes
  • 1 tablespoon lemon juice
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Rinse the spinach thoroughly under cold water to remove any dirt or grit. Pat it dry with paper towels or use a salad spinner to remove excess moisture.

Step 2

Heat a large skillet over medium heat and add the olive oil. Allow the oil to warm for about 1 minute.

Step 3

Add the minced garlic to the skillet and sauté for 1-2 minutes, stirring constantly, until fragrant but not browned.

Step 4

Sprinkle the red pepper flakes into the skillet and stir to combine with the garlic and oil.

Step 5

Add the spinach to the skillet a handful at a time, stirring frequently, until all the leaves are in the skillet and have begun to wilt. This should take 2-3 minutes.

Step 6

Drizzle the lemon juice over the wilted spinach and season with salt and black pepper. Stir well to coat the spinach evenly.

Step 7

Cook for an additional 2 minutes, allowing the spinach to become tender and heated through.

Step 8

Remove the skillet from heat and transfer the spinach to a serving dish. Serve immediately as a side dish or over grains, pasta, or protein of choice.
