  • 1 cup, sliced mushrooms
  • 2 cups, loosely packed spinach
  • 0.5 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 0.5 cup, crumbled cooked breakfast sausage or bacon (optional)

Directions

Step 1

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Set aside.

Place a large skillet over medium heat. Add the olive oil and butter, allowing the butter to melt.

Add the diced onion and bell pepper to the skillet. Sauté for 3–4 minutes or until they begin to soften.
