Directions

Step 1

Peel the Yukon Gold potatoes and slice them thinly (about 1/8-inch thick) using a sharp knife or a mandoline for even slices.

Peel and finely slice the shallots into thin rings.

In a large oven-safe skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat.

Arrange a single layer of potato slices on the bottom of the skillet, overlapping slightly. Sprinkle with a pinch of salt and black pepper, and scatter a few shallot rings on top.
