  • 1 pound new potatoes
  • 6 slices bacon
  • 1 red bell pepper

  • 1 small yellow onion

  • 0.25 teaspoon black pepper

Directions

Step 1

Wash the new potatoes thoroughly and cut them into halves or quarters, depending on their size, to ensure even cooking.

Place the cut potatoes in a pot of salted water and bring to a boil. Cook for 8-10 minutes, or until slightly tender but not fully cooked. Drain and set aside.

While the potatoes cook, dice the bacon slices into small pieces.

In a large skillet over medium heat, cook the bacon pieces until they are crispy. Remove the cooked bacon with a slotted spoon and place on a paper towel-lined plate to drain. Leave about 1 tablespoon of bacon grease in the skillet.
