  • 2 cups shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 pound cooked ground beef
  • 1 packet taco seasoning
  • 1 cup black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 piece fresh jalapeño, sliced
  • 0.5 cup sour cream
  • 0.5 cup guacamole
  • 2 tablespoons chopped fresh cilantro
  • 0.25 cup sliced black olives

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a skillet, cook the ground beef over medium heat until browned, about 5–7 minutes. Drain any excess grease.

Step 3

Add the taco seasoning to the cooked ground beef along with 1/4 cup of water. Cook for 2 additional minutes, stirring occasionally. Remove from heat.

Spread a layer of tortilla chips evenly in a large ovenproof skillet or baking dish.

Step 5

Sprinkle a mix of the cheddar and Monterey Jack cheeses over the chips.

Step 6

Add half of the cooked ground beef, black beans, and diced tomatoes on top of the cheese layer.

Step 7

Repeat with another layer of tortilla chips, followed by the remaining cheeses, ground beef, black beans, and diced tomatoes.

Step 8

Place the skillet in the preheated oven and bake for 8–10 minutes, or until the cheese is melted and bubbly.

Step 9

Carefully remove the skillet from the oven and let it cool slightly.

Step 10

Top the nachos with fresh jalapeño slices, sour cream, guacamole, cilantro, and black olives, as desired.

Step 11

Serve immediately in the skillet and enjoy!
