Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 8 ounces white mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 2 teaspoons Worcestershire sauce
  • 1 cup sour cream
  • 1 teaspoon paprika
  • 8 ounces egg noodles
  • 0 to taste salt
  • 0 to taste black pepper
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat a large skillet over medium-high heat and add the olive oil.

Step 2

Add the ground beef to the skillet and cook, breaking it apart with a wooden spoon, until browned and fully cooked, about 5-7 minutes. Drain any excess fat and set the beef aside on a plate.

Step 3

In the same skillet, add the diced onion and cook for 3-4 minutes, stirring occasionally, until softened.

Step 4

Add the minced garlic and sliced mushrooms to the skillet and cook for an additional 5 minutes until the mushrooms are tender and any liquid has evaporated.

Step 5

Sprinkle the flour over the vegetables and stir well to coat. Cook for 1 minute to eliminate the raw flour taste.

Step 6

Gradually pour in the beef broth while stirring to prevent lumps. Add the Worcestershire sauce and paprika. Bring the mixture to a simmer and let it cook for 3-4 minutes until slightly thickened.

Step 7

Return the cooked ground beef to the skillet and stir to combine evenly with the sauce.

Step 8

Reduce the heat to low and stir in the sour cream until the sauce is creamy and smooth. Adjust the seasoning with salt and black pepper to taste.

Step 9

Meanwhile, cook the egg noodles in a pot of salted boiling water according to the package instructions. Drain and set aside.

Step 10

Serve the stroganoff over the cooked egg noodles, garnished with fresh parsley if desired.
