Ingredients

  • 2 cups cooked ham, diced
  • 3 medium potatoes, diced
  • 2 medium carrots, peeled and sliced
  • 1 cup green beans, trimmed
  • 1 small yellow onion, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 0.5 cup chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 0.5 teaspoon dried thyme

Directions

Step 1

In a large skillet, heat the olive oil and butter over medium heat until the butter is melted.

Step 2

Add the diced potatoes and cook for 5-7 minutes, stirring occasionally, until they begin to brown slightly.

Step 3

Stir in the carrots and onions, cooking for another 3-4 minutes until the vegetables start softening.

Step 4

Add the green beans and cook for an additional 2 minutes.

Step 5

Push the vegetables to one side of the skillet and add the diced ham to the empty side. Allow the ham to heat through for 2-3 minutes.

Step 6

Stir everything in the skillet together and add the minced garlic, salt, pepper, and dried thyme. Cook for 1 minute until the garlic is fragrant.

Step 7

Pour in the chicken broth, cover the skillet with a lid, and reduce the heat to medium-low. Let the dish simmer for 10-12 minutes, or until the potatoes are tender.

Step 8

Remove the lid and cook for another 2-3 minutes to allow any excess liquid to evaporate.

Step 9

Taste and adjust seasonings as needed before serving hot.
