  • 4 boneless, skinless chicken breasts

  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium onion, finely diced
  • 2 celery stalks, diced
  • 2 garlic cloves, minced
  • 2.5 cups chicken stock
  • 4 cups herb-seasoned stuffing mix
  • 2 tablespoons all-purpose flour
  • 0.5 cup heavy cream

Directions

Step 1

Season the chicken breasts with salt, black pepper, and dried thyme on both sides.

Step 2

In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown. Remove the chicken from the skillet and set aside.

Reduce the heat to medium and add the remaining 2 tablespoons of butter to the skillet. Once melted, sauté the diced onion and celery for 3-4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant.
