Ingredients

  • 500 grams Tiger prawns (peeled and deveined, tails on)
  • 75 grams Unsalted butter (melted)
  • 2 tablespoons Honey
  • 2 tablespoons Lime juice (freshly squeezed)
  • 2 cloves Garlic (minced)
  • 0.5 teaspoons Chili flakes
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper (freshly ground)
  • 2 tablespoons Fresh cilantro (chopped)
  • 8 pieces Wooden or metal skewers
  • 4 pieces Lime wedges (for garnish)

Directions

Step 1

If using wooden skewers, soak them in water for at least 20 minutes to prevent burning.

Step 2

In a small bowl, whisk together melted butter, honey, lime juice, minced garlic, chili flakes, salt, and black pepper until well combined.

Step 3

Rinse the tiger prawns under cold water and pat them dry with a paper towel.

Step 4

Add the prawns to a large mixing bowl and pour 2/3 of the honey lime butter mixture over them. Toss to coat the prawns evenly, then cover and marinate in the refrigerator for 15 minutes. Reserve the remaining 1/3 of the sauce for basting.

Step 5

Preheat your grill or grill pan to medium-high heat.

Step 6

Thread the marinated prawns onto the skewers, ensuring they are securely skewered so they don’t fall off during grilling.

Step 7

Place the skewers on the hot grill and cook for 2-3 minutes per side, brushing with the reserved honey lime butter sauce as they cook. Grill until the prawns are opaque and have light grill marks.

Step 8

Remove the skewers from the grill and garnish them with freshly chopped cilantro.

Step 9

Serve hot with lime wedges on the side.
