Ingredients

  • 500 grams pork tenderloin
  • 1 large red bell pepper
  • 1 large zucchini
  • 200 grams pineapple chunks
  • 1 medium red onion
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 8 pieces wooden skewers

Directions

Step 1

Soak the wooden skewers in water for at least 30 minutes to prevent burning during cooking.

Step 2

Cut the pork tenderloin into bite-sized cubes, approximately 1 inch in size.

Step 3

Cut the red bell pepper, zucchini, and red onion into similar-sized chunks. Ensure the pineapple chunks are also bite-sized if not pre-sliced.

Step 4

In a small bowl, whisk together olive oil, garlic powder, paprika, dried oregano, honey, soy sauce, salt, and black pepper to create a marinade.

Step 5

Place the pork cubes in a resealable plastic bag or a shallow dish and pour half of the marinade over the pork. Toss to coat evenly, cover, and refrigerate for 30 minutes (or longer, if possible, for more flavor).

Step 6

In a separate bowl, toss the vegetables and pineapple chunks with the remaining marinade.

Step 7

Preheat a grill or stove-top grill pan to medium-high heat. Alternatively, preheat the oven to 200°C (400°F) if baking.

Step 8

Assemble the skewers by alternately threading pork cubes, red bell pepper, zucchini, red onion, and pineapple chunks. Repeat the pattern until all ingredients are used.

Step 9

Grill the skewers for 10-15 minutes, turning occasionally, until the pork is cooked through and the vegetables are lightly charred. For oven baking, place the skewers on a lined baking sheet and bake for 12-15 minutes, turning halfway through.

Step 10

Serve immediately, garnished with additional oregano or fresh parsley if desired.
