Ingredients

  • 500 grams Ground beef
  • 500 grams Ground lamb
  • 1 large (finely grated) Onion
  • 4 minced Garlic cloves
  • 50 grams Breadcrumbs
  • 1 large Egg
  • 30 grams (finely chopped) Fresh parsley
  • 2 teaspoons Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Smoked paprika
  • 1.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 2 tablespoons (for brushing) Olive oil
  • 10 pieces Wooden or metal skewers

Directions

Step 1

If using wooden skewers, soak them in water for at least 30 minutes to prevent burning during cooking.

Step 2

In a large mixing bowl, combine the ground beef, ground lamb, grated onion, minced garlic, breadcrumbs, egg, chopped parsley, ground cumin, ground coriander, smoked paprika, salt, and black pepper.

Step 3

Mix the ingredients thoroughly using your hands or a spatula until everything is well incorporated. Avoid overmixing to keep the meat tender.

Step 4

Divide the meat mixture into 10 equal portions. Take each portion and shape it into a long sausage-like log around a skewer, pressing firmly to secure the meat onto the skewer.

Step 5

Place the prepared skewers on a tray or plate. Lightly brush each skewer with olive oil to prevent sticking during cooking.

Step 6

Preheat your grill or broiler to medium-high heat. If grilling, lightly oil the grates as well.

Step 7

Cook the skewers for about 6-8 minutes on each side, or until fully cooked through and nicely browned on the outside. Use a meat thermometer to ensure an internal temperature of 74°C (165°F) if needed.

Step 8

Once cooked, remove the skewers from the heat and let them rest for 2-3 minutes.

Step 9

Serve the skewered ground meat warm with accompaniments like flatbread, tzatziki, grilled vegetables, or a fresh salad.
