Ingredients

  • 500 g Large raw prawns (peeled and deveined, tails intact)
  • 3 tbsp Fresh lime juice
  • 1 tsp Lime zest
  • 1 tsp Chilli flakes
  • 3 cloves Garlic (minced)
  • 2 tbsp Olive oil
  • 1 tsp Honey
  • 2 tbsp Fresh coriander leaves (chopped)
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper
  • 10 pieces Wooden skewers (soaked in water for 20 minutes)

Directions

Step 1

In a medium bowl, whisk together the lime juice, lime zest, chilli flakes, minced garlic, olive oil, honey, salt, and black pepper to create the marinade.

Step 2

Add the prawns to the bowl and toss well to coat. Cover and refrigerate for 20–30 minutes to allow the prawns to absorb the flavors.

Step 3

If using wooden skewers, soak them in water for at least 20 minutes to prevent burning during cooking.

Step 4

Preheat a grill or broiler to medium-high heat.

Step 5

Remove the prawns from the marinade and thread them onto the soaked skewers. Discard any leftover marinade.

Step 6

Place the skewers on the grill or under the broiler. Cook for 2–3 minutes on each side, or until the prawns turn pink and are slightly charred on the edges.

Step 7

Remove the skewers from the grill and garnish the prawns with fresh coriander leaves.
