Ingredients

  • 12 oz Pasta (penne or spaghetti)
  • 4 Italian sausages (mild or spicy)
  • 2 tbsp Olive oil
  • 3 Garlic cloves, minced
  • 0.5 tsp Crushed red pepper flakes (optional)
  • 14 oz Canned crushed tomatoes
  • 2 tbsp Tomato paste
  • 1 tsp Dried oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 0.25 cup Fresh basil leaves, chopped
  • 0.5 cup Grated Parmesan cheese
  • 4 qt Water (for boiling pasta)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the Italian sausages and cook for 6-8 minutes, turning occasionally, until browned and cooked through. Transfer the sausages to a cutting board and let them rest for a minute.

Step 3

In the same skillet, add the minced garlic and sauté for 1 minute or until fragrant. If you enjoy some spice, add the crushed red pepper flakes and stir for an additional 30 seconds.

Step 4

Stir in the crushed tomatoes, tomato paste, dried oregano, salt, and black pepper. Bring to a simmer, then reduce the heat and let the sauce cook for 5 minutes to thicken slightly.

Slice the cooked sausages into bite-sized pieces and return them to the skillet. Stir them into the sauce and cook for another 2-3 minutes to combine the flavors.

Add the drained pasta to the skillet, tossing it gently to coat the pasta in the sauce. If the sauce feels too thick, add a bit of the reserved pasta water, 1-2 tablespoons at a time, until you reach your desired consistency.
