Ingredients

  • 5 cups All-purpose flour
  • 2 cups Granulated sugar
  • 5 teaspoons Baking soda
  • 2 teaspoons Salt
  • 4 cups Cereal bran flakes
  • 4 cups Buttermilk
  • 1 cup Vegetable oil
  • 4 large Eggs
  • 2 cups Grated apples
  • 2 teaspoons Vanilla extract
  • 1 teaspoon Ground cinnamon (optional)

Directions

Step 1

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking soda, salt, and cereal bran flakes.

Step 2

In a separate bowl, whisk the buttermilk, vegetable oil, eggs, and vanilla extract until well combined.

Step 3

Slowly add the wet ingredients to the dry ingredients, stirring gently until just combined. Avoid overmixing.

Step 4

Fold in the grated apples and, if desired, the ground cinnamon for added flavor.

Step 5

Cover the mixing bowl with plastic wrap and allow the batter to rest in the refrigerator for at least 12 hours before baking. The batter can be stored for up to six weeks in the fridge.

Step 6

When ready to bake, preheat your oven to 375°F (190°C). Line a muffin pan with paper liners or grease the cups lightly.

Step 7

Scoop the batter into the prepared muffin pan, filling each cup about three-quarters of the way full.

Step 8

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffins from the oven and let them cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature. Store any leftovers in an airtight container for up to 3 days, or freeze for longer storage.
