Directions

Step 1

In a medium saucepan, combine the granulated sugar, heavy cream, and whole milk over medium heat. Heat until the mixture is warm and steaming, stirring occasionally. Do not let it boil.

In a small bowl, whisk the egg yolks until they are pale and smooth.

Step 3

Slowly pour about 1/2 cup of the warm milk mixture into the egg yolks, whisking constantly to temper the eggs. This prevents them from scrambling.

Pour the tempered egg yolk mixture back into the saucepan with the remaining milk mixture.
