Ingredients

  • 100 grams dark chocolate (70% cocoa solids)
  • 100 grams unsalted butter
  • 75 grams caster sugar
  • 2 whole large eggs
  • 2 whole egg yolks
  • 50 grams plain flour
  • 1 tablespoon unsweetened cocoa powder (for dusting)

Directions

Step 1

Preheat your oven to 200°C (180°C fan)/400°F/gas mark 6. Lightly grease 4 ramekins and dust the insides with unsweetened cocoa powder to prevent sticking.

Step 2

Melt the dark chocolate and unsalted butter together in a heatproof bowl over a pot of gently simmering water, stirring occasionally until smooth. Alternatively, melt them in short bursts in the microwave, stirring between intervals. Set aside to cool slightly.

Step 3

In a separate bowl, whisk the caster sugar, eggs, and egg yolks together until the mixture is pale and thick, about 2-3 minutes.

Gently fold the melted chocolate mixture into the egg mixture using a spatula, ensuring it is fully incorporated.
