Ingredients

  • 300 grams Ground pork
  • 150 grams Shrimp, peeled and deveined
  • 2 stalks Green onions, finely chopped
  • 50 grams Water chestnuts, finely chopped
  • 1 tablespoon Soy sauce
  • 1 teaspoon Sesame oil
  • 1 tablespoon Chinese rice wine or dry sherry
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Sugar
  • 1 tablespoon Cornstarch
  • 0.25 teaspoon White pepper
  • 1 whole Egg
  • 30 piece Wonton wrappers
  • 30 piece Peas or goji berries
  • 1 tablespoon Cooking oil (for greasing the steamer)

Directions

Step 1

Begin by finely chopping the shrimp into small pieces and placing them into a large mixing bowl alongside the ground pork.

Step 2

Add the finely chopped green onions and water chestnuts to the bowl with the meat.

Step 3

In the same bowl, incorporate the soy sauce, sesame oil, Chinese rice wine, salt, sugar, cornstarch, white pepper, and the egg. Mix everything thoroughly until combined. The mixture should be slightly sticky.

Step 4

Prepare the wonton wrappers by placing them onto a clean work surface. Place a heaping teaspoon of filling into the center of each wrapper.

Step 5

Cup the dumpling in one hand and pleat the wrapper around the filling using the other hand, leaving the top open.

Step 6

Gently flatten the bottom of the dumpling so it stands upright, and place a pea or goji berry on top for garnish.

Step 7

Grease a bamboo steamer or metal steamer rack with a small amount of cooking oil to prevent sticking.

Step 8

Arrange the siumai in the steamer in a single layer, leaving space between each to allow the steam to circulate.

Step 9

Bring a pot of water to a boil and place the steamer over it. Steam the siumai for 12-15 minutes, or until the filling is cooked through.

Step 10

Remove carefully from the steamer and serve hot with soy sauce or your preferred dipping sauce.
