Ingredients

  • 300 grams ground pork
  • 200 grams shrimp, peeled and deveined
  • 4 pieces shiitake mushrooms, rehydrated and finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch
  • 1 teaspoon sugar
  • 0.5 teaspoon salt
  • 0.25 teaspoon white pepper
  • 24 pieces wonton wrappers
  • 24 pieces frozen peas

Directions

Step 1

Roughly chop the shrimp, then combine with the ground pork in a large mixing bowl.

Step 2

Add finely chopped shiitake mushrooms to the mixture.

Step 3

Add soy sauce, oyster sauce, sesame oil, cornstarch, sugar, salt, and white pepper to the bowl.

Step 4

Mix the ingredients together thoroughly until well combined and sticky.

Step 5

Take a wonton wrapper and spoon a heaping tablespoon of the filling into the center.

Step 6

Gently gather the edges of the wrapper around the filling, leaving the top exposed to form a small cup shape.

Step 7

Press the bottom so it flattens, allowing the dumpling to stand upright. Repeat with remaining wrappers and filling.

Step 8

Press one frozen pea onto the top of each dumpling as a garnish.

Step 9

Prepare a steamer by lining it with parchment paper or cabbage leaves to prevent sticking.

Step 10

Place the siu mai in the steamer, leaving space between each dumpling.

Step 11

Steam over boiling water for 10-12 minutes, or until the filling is cooked through and the shrimp are pink and opaque.

Step 12

Serve immediately with your choice of soy sauce or chili sauce.
