Ingredients

  • 1 small head Green cabbage
  • 2 medium Tomatoes
  • 1 large Cucumber
  • 0.5 cup Fresh parsley
  • 0.25 cup Fresh mint leaves
  • 0.25 cup Lemon juice
  • 3 tablespoons Olive oil
  • 1 clove Garlic
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Sumac

Directions

Step 1

Wash the cabbage, tomatoes, cucumber, parsley, and mint thoroughly under cold water and pat dry.

Step 2

Thinly slice the green cabbage using a sharp knife to create fine shreds. Place the shredded cabbage into a large mixing bowl.

Step 3

Dice the tomatoes into small cubes and add them to the mixing bowl.

Step 4

Cut the cucumber into small cubes, leaving the skin on for added crunch and color, and add to the bowl.

Step 5

Finely chop the parsley and mint leaves and add them to the bowl with the vegetables.

Step 6

In a small mixing bowl, prepare the dressing by combining lemon juice, olive oil, minced garlic, salt, black pepper, and sumac. Whisk until the mixture is well blended.

Step 7

Pour the dressing over the salad and toss everything together until the vegetables are evenly coated with the dressing.

Step 8

Let the salad sit for 5–10 minutes to allow the flavors to meld together.

Step 9

Serve immediately or refrigerate for up to 1 hour before serving for extra crispness.
