Ingredients

  • 3 cups broccoli florets
  • 3 cups cauliflower florets
  • 2 cups carrots (peeled and sliced)
  • 2 tablespoons olive oil
  • 1 medium onion (diced)
  • 3 cloves garlic cloves (minced)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1 cup panko breadcrumbs
  • 2 tablespoons butter (melted)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 teaspoon dried thyme

Directions

Step 1

Preheat the oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish with cooking spray or oil.

Step 2

Bring a large pot of water to a boil. Add the broccoli, cauliflower, and carrots, and blanch the vegetables for 3-4 minutes. Drain and set aside.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for 3-4 minutes until softened. Add the minced garlic and cook for another minute.

Step 4

In a mixing bowl, combine the cream of mushroom soup, sour cream, salt, pepper, and dried thyme. Stir in the sautéed onion and garlic mixture.

Step 5

Place the blanched vegetables in the prepared baking dish. Pour the creamy sauce over the vegetables and gently mix to coat them evenly.

Step 6

Sprinkle the shredded cheddar cheese evenly over the mixture.

Step 7

In a small bowl, combine the panko breadcrumbs with melted butter. Mix until the breadcrumbs are evenly coated. Sprinkle the breadcrumb mixture over the cheese layer.

Step 8

Bake the casserole in the preheated oven for 30-35 minutes, or until the top is golden brown and bubbling.

Step 9

Remove from the oven and let it cool for 5 minutes before serving.
