Ingredients

  • 200 g Golden syrup (or light corn syrup)
  • 125 g Unsalted butter
  • 175 g Granulated sugar
  • 300 g All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Ground cinnamon
  • 1 tsp Ground ginger
  • 0.5 tsp Ground cloves
  • 0.5 tsp Ground allspice
  • 0.5 tsp Ground cardamom
  • 50 g Whole blanched almonds (optional, for decoration)

Directions

Step 1

In a medium saucepan, combine the golden syrup, butter, and sugar. Heat over medium heat, stirring frequently, until the mixture is melted and smooth. Remove from the heat and let it cool slightly.

Step 2

In a large mixing bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, allspice, and cardamom.

Gradually pour the warm syrup mixture into the dry ingredients. Stir with a wooden spoon until the dough comes together. The dough will be sticky and soft.

Cover the bowl with plastic wrap and refrigerate the dough for at least 2 hours, or preferably overnight, until it firms up.
