  • 1 piece Bay leaf
  • 0.25 cup Fresh cilantro, chopped (optional, for garnish)
  • 0.5 cup Sour cream (optional, for serving)
  • 0.5 cup Shredded cheddar cheese (optional, for serving)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the diced sirloin steak and sear until browned on all sides, about 5-7 minutes. Remove the steak and set it aside.

Step 3

In the same pot, add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Step 4

Add the diced red and green bell peppers to the pot and cook for 4-5 minutes until tender.

Step 5

Pour in the crushed tomatoes and beef broth, then stir to combine.

Step 6

Return the seared sirloin cubes to the pot, followed by the black beans, kidney beans, and pinto beans. Stir everything together.

Step 7

Mix in the chili powder, ground cumin, smoked paprika, dried oregano, salt, black pepper, and bay leaf.

Step 8

Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 45 minutes, stirring occasionally.

Step 9

Taste and adjust seasoning if needed. Remove the bay leaf before serving.

Step 10

Ladle the chili into bowls and garnish with chopped fresh cilantro, sour cream, or shredded cheddar cheese if desired.
