Ingredients

  • 4 pieces (6-8 ounces each) sirloin steak
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 1 medium white onion, finely diced
  • 2 cloves garlic cloves, minced
  • 8 ounces white or cremini mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 1 cup heavy cream
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Pat the sirloin steaks dry with paper towels. Season both sides with 1 teaspoon of salt and 1 teaspoon of black pepper.

Step 2

Heat a large skillet over medium-high heat and add the olive oil. Once the oil is shimmering, add the steaks. Sear for 3-4 minutes per side for medium-rare (adjust cooking time according to your desired doneness). Remove steaks from the skillet and let them rest on a plate, tented with foil.

Step 3

In the same skillet, reduce the heat to medium and add the butter. Once melted, add the diced onion and sauté for 2-3 minutes until softened and translucent.

Step 4

Add the minced garlic and sliced mushrooms to the skillet. Cook for 4-5 minutes until the mushrooms are browned and tender, stirring occasionally.

Step 5

Sprinkle the flour over the mushroom mixture and stir to coat evenly. Cook for 1 minute to remove the raw flour taste.

Step 6

Slowly pour in the beef broth while stirring to prevent lumps. Bring the mixture to a simmer and let it cook for 3-4 minutes until it thickens.

Step 7

Reduce the heat to low and stir in the heavy cream. Let the gravy simmer for an additional 2-3 minutes. Taste and add the remaining 1 teaspoon of salt if needed.

Step 8

Return the cooked steaks to the skillet, spooning the mushroom gravy over the top. Allow them to warm through for 2 minutes.

Step 9

Serve the sirloin steaks with mushroom gravy immediately, garnished with chopped fresh parsley. Enjoy!
