  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Directions

Step 1

Remove the sirloin steaks from the refrigerator about 30 minutes before cooking to bring them to room temperature.

Pat the steaks dry with paper towels, then season both sides generously with salt and black pepper.

Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Add the olive oil and heat until shimmering.
