Ingredients

  • 2 pieces (8-ounce each) sirloin steak
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium, finely chopped shallot
  • 1 cup port wine
  • 1 cup beef broth
  • 1 tablespoon Dijon mustard
  • 2 tablespoons heavy cream
  • 1 tablespoon, finely chopped (optional for garnish) fresh parsley

Directions

Step 1

Pat the sirloin steaks dry with paper towels and season both sides evenly with salt and black pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat until shimmering but not smoking.

Step 3

Sear the steaks for 3-4 minutes on each side for medium-rare, or adjust to your doneness preference. Remove the steaks to a plate and tent with foil to keep warm.

Step 4

Reduce the heat to medium and add the butter to the skillet. Once melted, add the finely chopped shallot and sauté for 1-2 minutes until softened.

Step 5

Pour in the port wine and stir, scraping up any browned bits from the bottom of the pan. Simmer for 3-4 minutes to reduce the liquid slightly.

Step 6

Add the beef broth and continue simmering for another 4-5 minutes until the sauce reduces and thickens slightly.

Step 7

Whisk in the Dijon mustard and heavy cream until fully combined. Taste and adjust seasoning with additional salt and pepper, if needed.

Step 8

Return the steaks to the skillet, turning to coat them in the sauce. Heat for 1-2 minutes to warm through.

Step 9

Transfer the steaks to serving plates and drizzle the sauce generously over each steak.

Step 10

Garnish with fresh parsley, if desired, and serve immediately with your favorite side dishes.
