Ingredients

  • 1.5 pounds sirloin steak
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large onion
  • 3 count garlic cloves
  • 3 medium carrots
  • 2 count celery stalk
  • 8 ounces mushrooms
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons fresh thyme
  • 4 medium potatoes
  • 1 cup shredded cheddar cheese
  • 2 tablespoons parsley (optional, for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Pat the sirloin steak dry with paper towels and season both sides with salt and pepper.

Step 3

Cut the steak into bite-sized cubes, about 1 inch each.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the steak cubes in batches for 2-3 minutes per side, until browned. Transfer the steak to a plate and set aside.

Step 5

Chop the onion, mince the garlic, slice the carrots and celery, and quarter the mushrooms.

Step 6

In the same skillet, add the remaining tablespoon of olive oil and sauté the onions for 3-4 minutes, until softened.

Step 7

Add the garlic, carrots, celery, and mushrooms to the skillet. Cook for another 5-7 minutes, stirring occasionally.

Step 8

Sprinkle the flour over the vegetables and stir well to combine. Cook for 1-2 minutes to eliminate the raw flour taste.

Step 9

Gradually add the beef broth to the skillet, stirring constantly to create a smooth sauce.

Step 10

Stir in the tomato paste, Worcestershire sauce, and fresh thyme. Bring the mixture to a simmer.

Step 11

Peel and dice the potatoes into small cubes. Set aside.

Step 12

In a 9x13 inch casserole dish, combine the seared steak, vegetable mixture, and diced potatoes. Mix well to distribute evenly.

Step 13

Cover the casserole dish with aluminum foil and bake in the preheated oven for 60 minutes.

Step 14

Remove the foil and sprinkle the shredded cheddar cheese over the casserole. Return to the oven and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.

Step 15

Remove the casserole from the oven and let it cool for 5 minutes. Garnish with chopped parsley, if using, before serving.

Step 16

Serve hot and enjoy your delicious Sirloin Steak Casserole!
