  • 2 pieces (each approximately 8 oz) sirloin steak
  • 2 tablespoons olive oil

  • 1 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 3 cloves (minced) garlic cloves
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 teaspoon lemon juice
  • 1 platter (pre-heated for serving) optional sizzling platter

Directions

Step 1

Take the sirloin steaks out of the refrigerator at least 30 minutes prior to cooking to allow them to come to room temperature for even cooking.

Step 2

Pat the steaks dry with paper towels to remove excess moisture, then season both sides generously with kosher salt and black pepper.

Step 3

Heat a cast-iron skillet over medium-high heat for 3-4 minutes. Once hot, add the olive oil and swirl to coat the bottom of the pan.
