Ingredients

  • 12 oz sirloin steak
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 5 cups mixed salad greens
  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • 0.5 medium red onion
  • 0.5 cup feta cheese
  • 2 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic

Directions

Step 1

Season the sirloin steak with 1 teaspoon of salt and 1 teaspoon of black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Once hot, add the steak and cook for 4-5 minutes on each side for medium-rare, or adjust to your preferred doneness. Remove from the skillet and allow the steak to rest for 5 minutes before slicing thinly against the grain.

While the steak rests, wash and dry the mixed salad greens. Slice the cherry tomatoes in half, peel and slice the cucumber into thin rounds, and thinly slice the red onion.

To prepare the vinaigrette, finely mince the garlic clove. In a small bowl, whisk together the balsamic vinegar, Dijon mustard, honey, minced garlic, and the remaining 1 tablespoon of olive oil. Adjust seasoning with salt and pepper to taste.
