Ingredients

  • 4 slices Sirloin steak
  • 2 cups Spinach leaves
  • 1 cup Mushrooms, finely chopped
  • 0.5 medium Onion, finely diced
  • 2 pieces Garlic cloves, minced
  • 2 tablespoons Olive oil
  • 0.5 cup Parmesan cheese, grated
  • 0.5 cup Breadcrumbs
  • 0.5 teaspoons Salt
  • 0.5 teaspoons Black pepper
  • 0.5 teaspoons Paprika
  • 8 pieces Toothpicks or kitchen twine

Directions

Step 1

Place each piece of sirloin steak between two sheets of plastic wrap and pound with a meat mallet to an even thickness of about 1/4 inch.

Step 2

Season both sides of the steak slices with salt, pepper, and paprika, then set aside.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and cook until translucent, about 3 minutes.

Step 4

Stir in the mushrooms and garlic and cook until softened, about 4 minutes. Add the spinach and cook until wilted, about 2 minutes.

Step 5

Remove the skillet from the heat and stir in the breadcrumbs and Parmesan cheese. Mix until the stuffing holds together but is not overly wet.

Step 6

Lay each slice of steak flat and place 2 to 3 tablespoons of the stuffing mixture onto one end of the slice. Roll the steak tightly around the stuffing and secure with toothpicks or kitchen twine.

Step 7

Heat the remaining 1 tablespoon of olive oil in the same skillet over medium heat. Sear the sirloin rolls on all sides until browned, about 2-3 minutes per side.

Step 8

Transfer the rolls to a baking dish and bake at 375°F (190°C) for 10-12 minutes, or until the internal temperature of the beef reaches 135°F (medium-rare) or 145°F (medium).

Step 9

Remove the sirloin rolls from the oven, let them rest for 5 minutes, then carefully remove the toothpicks or twine. Serve warm and enjoy!
