  • 2 tablespoons Olive oil
  • 2 tablespoons Fresh lime juice

  • 2 teaspoons Salt
  • 1 teaspoon Freshly ground black pepper
  • 1 cup Beef stock
  • 1 tablespoon Cornstarch
  • 2 tablespoons Water
  • 2 tablespoons Fresh cilantro, chopped (for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a small bowl, mix together the ancho chili powder, smoked paprika, ground cumin, cocoa powder, minced garlic, olive oil, lime juice, dark brown sugar, salt, and black pepper to form a thick paste.

Pat the sirloin roast dry with paper towels and rub the spice paste evenly over the entire surface of the meat. Let it rest for 15 minutes to marinate.
