Ingredients

  • 1.5 lbs ground sirloin
  • 1 tsp kosher salt
  • 0.5 tsp ground black pepper
  • 2 large Vidalia onions
  • 2 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 tbsp dry sherry
  • 0.5 cup mayonnaise
  • 0.25 cup blue cheese crumbles
  • 0.25 tsp garlic powder
  • 4 brioche burger buns
  • 4 lettuce leaves
  • 8 tomato slices

Directions

Step 1

In a large mixing bowl, combine the ground sirloin with kosher salt and ground black pepper. Form the mixture into 4 evenly sized burger patties, about 3/4 inch thick. Refrigerate until ready to cook.

Step 2

Peel and thinly slice the Vidalia onions. In a large skillet, heat the butter and olive oil over medium heat until melted.

Step 3

Add the onions to the skillet and cook, stirring occasionally, for 12-15 minutes or until caramelized and golden brown.

Step 4

Stir in the dry sherry and cook for an additional 2 minutes, allowing the liquid to reduce slightly. Remove the onions from the heat and set aside.

Step 5

In a small bowl, whisk together the mayonnaise, blue cheese crumbles, and garlic powder until smooth. Cover and refrigerate until needed.

Step 6

Preheat a grill or grill pan over medium-high heat. Lightly oil the grill grates to prevent sticking.

Step 7

Grill the burger patties for 4-5 minutes per side, or until they reach your desired level of doneness. For medium-rare, aim for an internal temperature of 135°F; for medium, 145°F.

Step 8

While the burgers cook, toast the brioche buns on the grill for 1-2 minutes, until lightly golden.

Step 9

To assemble the burgers, spread a generous amount of blue cheese mayo on the bottom half of each bun. Add a lettuce leaf, followed by a cooked burger patty.

Step 10

Top each patty with the caramelized sherry Vidalia onions and two slices of tomato. Finish with the top half of the bun.

Step 11

Serve immediately with your favorite side dishes.
