Ingredients

  • 200 grams all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoons ground cloves
  • 0.25 teaspoons salt
  • 120 grams unsalted butter
  • 150 grams honey
  • 100 grams granulated sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 120 milliliters milk
  • 1 teaspoon orange zest
  • 50 grams chopped walnuts (optional)
  • 50 grams extra honey for drizzling

Directions

Step 1

Preheat your oven to 180°C (350°F) and grease a 22cm (9-inch) round cake pan. Optionally, line the bottom with parchment paper for easier removal.

Step 2

In a large mixing bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, ground cloves, and salt. Set aside.

Step 3

In another bowl, cream the unsalted butter, honey, and granulated sugar together using a hand mixer or stand mixer until the mixture is light and fluffy, about 3-4 minutes.

Step 4

Add the eggs to the butter mixture, one at a time, beating well after each addition. Stir in the vanilla extract and orange zest.

Step 5

Gradually add the dry ingredients to the wet mixture in three additions, alternating with the milk. Start and end with the dry ingredients. Mix until just combined—do not overmix.

Step 6

If using, gently fold in the chopped walnuts to distribute them evenly throughout the batter.

Step 7

Pour the batter into the prepared cake pan and smooth the top with a spatula.

Step 8

Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Allow the cake to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Step 10

Once the cake is cool, drizzle the top with extra honey for added sweetness and shine. Slice and serve. Enjoy your Siphniac Honey Cake!
