Ingredients

  • 10 pieces Fresh red chili peppers (e.g., habanero, cayenne, or Thai chilies)
  • 4 pieces Garlic cloves
  • 1 medium White onion, chopped
  • 1 cup Distilled white vinegar
  • 2 tablespoons Fresh lemon juice
  • 1 tablespoon Honey
  • 1 teaspoon Salt
  • 1 tablespoon Olive oil
  • 1 cup Water

Directions

Step 1

Wear food-safe gloves to protect your hands while handling the chili peppers. Slice the peppers in half lengthwise and remove the stems. If you want a milder sauce, remove some or all of the seeds.

Step 2

Peel the garlic cloves and chop the onion into rough chunks.

Step 3

In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and garlic. Sauté for 2–3 minutes until softened and fragrant.

Add the chili peppers to the saucepan and sauté for another 2 minutes.

Step 5

Pour in the distilled white vinegar and water. Bring the mixture to a boil, then reduce the heat to low and simmer uncovered for 15 minutes. This will soften the peppers and mellow the acidity of the vinegar.

Remove the saucepan from heat and let it cool for 5–10 minutes.

Carefully transfer the mixture to a blender. Add the fresh lemon juice, honey, and salt. Blend on high speed until the sauce is smooth and fully combined.

Strain the hot sauce through a fine-mesh sieve into a bowl or jar to remove any remaining solids, if desired. This step will result in a smoother sauce, though it’s optional.

Pour the hot sauce into a clean, airtight jar or bottle. Let it cool to room temperature before refrigerating.

The hot sauce will keep in the refrigerator for up to 3 months. Shake well before each use.
