Ingredients

  • 250 grams All-purpose flour
  • 2 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 2 teaspoons Ground cinnamon
  • 1 teaspoon Ground ginger
  • 0.5 teaspoons Ground nutmeg
  • 200 grams Unsalted butter, softened
  • 150 grams Light brown sugar
  • 50 grams Granulated sugar
  • 3 large Eggs
  • 1.5 teaspoons Vanilla extract
  • 120 milliliters Whole milk
  • 200 grams Prepared almond paste
  • 2 tablespoons Powdered sugar (for dusting)

Directions

Step 1

Preheat your oven to 175°C (350°F). Prepare a 20 cm (8-inch) round cake pan by greasing it with butter and lining the bottom with parchment paper.

Step 2

In a medium-sized mixing bowl, whisk together the all-purpose flour, baking powder, salt, ground cinnamon, ground ginger, and ground nutmeg. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to cream the softened butter, light brown sugar, and granulated sugar until light and fluffy (about 3-4 minutes).

Step 4

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

Step 5

Gradually add the dry ingredients to the wet ingredients in three batches, alternating with the milk. Begin and end with the dry ingredients. Mix just until incorporated.

Step 6

Spread half of the cake batter evenly into the prepared cake pan. Crumble the almond paste over the batter in an even layer.

Step 7

Pour the remaining cake batter over the almond paste and spread it evenly with a spatula.

Step 8

Bake in the preheated oven for 35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Step 9

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.

Step 10

Once cooled, dust the top of the cake with powdered sugar for decoration.

Step 11

Slice and serve your festive Sinterklaas St. Nicholas Cake with coffee or tea!
