Ingredients

  • 2 pounds pork belly
  • 8 cups water
  • 40 grams tamarind paste or sinigang mix
  • 3 pieces tomatoes
  • 1 piece onion
  • 1 piece radish
  • 2 pieces eggplant
  • 1 bunch sitaw (string beans)
  • 1 bunch kangkong (water spinach)
  • 2 tablespoons fish sauce
  • 2 pieces green chili peppers
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper

Directions

Step 1

Cut the pork belly into cubes, approximately 1 to 1.5 inches in size.

Step 2

In a large pot, bring 8 cups of water to a boil.

Step 3

Add the pork belly cubes to the boiling water and let it boil for about 5 minutes. Skim off any impurities that rise to the surface.

Step 4

Add the whole onion and halved tomatoes to the pot.

Lower the heat and let it simmer for about 30 minutes or until the pork is tender.

Add the tamarind paste or sinigang mix, followed by the fish sauce, and stir well.

Slice the radish into discs, and chop the eggplants into medium sized pieces. Add them to the pot and simmer for another 10 minutes.

Trim the string beans and add them to the soup. Cook for 5 more minutes.

Add the green chili peppers and let it simmer for another 2-3 minutes to release the flavor.

Season the soup with salt and ground black pepper according to your taste.

Finally, add the kangkong leaves, stir, and cover the pot. Remove from heat and let the residual heat cook the kangkong.
