Ingredients

  • 200 g rice vermicelli noodles
  • 200 g boneless, skinless chicken breast
  • 200 g shrimp, peeled and deveined
  • 1 yellow onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned
  • 3 green onions, chopped
  • 100 g bean sprouts
  • 3 garlic cloves, minced
  • 2 tbsp curry powder
  • 3 tbsp soy sauce
  • 2 tbsp oyster sauce
  • 1 tbsp sesame oil
  • 2 tbsp vegetable oil
  • 2 egg, lightly beaten
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Soak the rice vermicelli noodles in warm water for 10 minutes, or until softened. Drain and set aside.

Step 2

Slice the chicken into thin strips and season with a pinch of salt and black pepper.

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat.

Add the chicken and stir-fry until fully cooked, about 4-5 minutes. Remove the chicken from the wok and set aside.
