Ingredients

  • 3 pounds chuck roast
  • 1 teaspoons salt
  • 1 teaspoons black pepper
  • 1 teaspoons garlic powder
  • 1 teaspoons onion powder
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 4 medium carrots, peeled and cut into chunks
  • 3 stalks celery stalks, cut into chunks
  • 4 medium potatoes, peeled and quartered
  • 2 cups beef broth
  • 2 tablespoons Worcestershire sauce
  • 3 fresh thyme sprigs
  • 2 bay leaves

Directions

Step 1

Season the chuck roast generously on all sides with the salt, black pepper, garlic powder, and onion powder.

Step 2

Heat the olive oil in a large skillet over medium-high heat. Sear the chuck roast on all sides until browned, about 3-4 minutes per side. This step is optional but enhances flavor.

Step 3

Place the seared roast in the bottom of a slow cooker.

Add the diced yellow onion, carrots, celery, and potatoes around and on top of the roast.
