In a small saucepan over medium heat, warm 1 cup of whole milk until it’s just warm to the touch (about 110°F). Remove from heat and stir in 6 tablespoons of unsalted butter and 1/3 cup of granulated sugar until melted and combined. Let this mixture cool slightly.
In a small bowl, dissolve 2 1/4 teaspoons of active dry yeast in 1/4 cup of warm water. Allow it to sit for 5-10 minutes until frothy.
In a large mixing bowl, combine the cooled milk mixture, the yeast mixture, 4 cups of all-purpose flour, 1 teaspoon of salt, and 2 eggs. Stir until a sticky dough forms.
Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, or until smooth and elastic. Alternatively, you can use a stand mixer with a dough hook attachment for this step.
Place the dough in a lightly greased bowl, cover with plastic wrap or a clean kitchen towel, and let it rise in a warm place for 1-1.5 hours, or until it has doubled in size.
While the dough rises, prepare the filling. In a small bowl, mix 3/4 cup of light brown sugar with 1 1/2 tablespoons of ground cinnamon.
Once the dough has risen, punch it down and turn it onto a floured surface. Roll it out into a 16x12-inch rectangle.
Spread 5 tablespoons of softened unsalted butter evenly over the dough. Sprinkle the cinnamon-sugar mixture over the buttered surface, leaving a 1/2-inch border around the edges.
Starting from the long edge, tightly roll the dough into a log. Pinch the seam to seal.
Cut the roll into 12 equal slices and arrange them in a greased 9x13-inch baking dish. Cover the dish and let the rolls rise for another 30 minutes, or until puffy.
Preheat the oven to 350°F (175°C). Once the rolls have risen, bake them for 20-25 minutes, or until golden brown.
While the rolls bake, prepare the frosting. In a medium bowl, beat together 4 ounces of softened cream cheese, 1 1/2 cups of powdered sugar, 1 teaspoon of vanilla extract, and 3 tablespoons of whole milk until smooth and creamy.
Remove the cinnamon rolls from the oven and allow them to cool for 5 minutes. Generously spread the cream cheese frosting over the warm rolls.
Serve warm and enjoy your Simply Sinful Cinnamon Rolls!
